Recipe of the Week: Turkey and Spinach Stuffed Peppers

Ingredients (for 4 servings):

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup fresh spinach, chopped
  • 1/2 cup quinoa, cooked
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese

Stuffed with flavor, these peppers are a touchdown for your taste buds!

Grocery List:

  • Bell peppers (4)
  • Ground turkey (1 lb)
  • Fresh spinach (1 cup)
  • Quinoa (1/2 cup)
  • Small onion (1)
  • Garlic cloves (2)
  • Olive oil (1 tsp)
  • Italian seasoning (1 tsp)
  • Salt and pepper
  • Marinara sauce (1/2 cup)
  • Shredded mozzarella cheese (1/4 cup)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add ground turkey, cook until browned.
  5. Stir in spinach, quinoa, Italian seasoning, salt, and pepper. Cook until spinach wilts.
  6. Stuff each pepper with the turkey mixture and place in a baking dish.
  7. Pour marinara sauce over the stuffed peppers.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes.
  10. Enjoy this hearty, high-protein, and low-carb meal with your family!
