🦃 Thanksgiving Prep: Gratitude, Healthy Choices, and Delicious Recipes!

As we approach Thanksgiving, it's a wonderful time to reflect on what we're grateful for and to prepare our hearts and homes for the holiday. This week, let’s focus on making healthy choices that nourish our bodies while still enjoying the festivities.

Embrace Gratitude

This week, I encourage you to take a moment each day to express gratitude. Whether it's for your health, family, or the delicious food on your table, acknowledging what you're thankful for can enhance your overall well-being. Consider keeping a gratitude journal leading up to Thanksgiving! My husband and I did this with our son at the dinner table nightly. Now my son is 29 and my husband and I continue to do this together. It has made a huge difference in perspective!

Week 3: Gratitude

Healthy Recipe: Pumpkin Chickpea Curry

This flavorful dish is a fantastic addition to your Thanksgiving spread and is packed with nutrients!

Ingredients (serves 4):

  • 1 can chickpeas, drained and rinsed
  • 1 can pumpkin puree (not pumpkin pie filling)
  • 1 cup coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ginger (fresh or ground)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add curry powder and ginger; cook for another minute.
  3. Stir in chickpeas, pumpkin puree, and coconut milk. Simmer for 15 minutes.
  4. Season with salt and pepper; garnish with fresh cilantro before serving.

This dish is not only delicious but also provides fiber and protein to keep you satisfied!

As you gather around the table this Thanksgiving, challenge yourself to practice mindful eating:

  • Take a moment to appreciate the flavors of each dish.
  • Chew slowly and savor each bite.
