Celebrating World Vegetarian Day: More Than Just Veggies!

World Vegetarian Day isn't just for vegetarians - it's a great opportunity for everyone to explore the health benefits of a plant-based diet. Did you know that incorporating more vegetables into your meals can help reduce the risk of certain cancers? Here are some cancer-fighting foods to add to your plate:

  • Cruciferous vegetables (broccoli, cauliflower, Brussels sprouts)
  • Berries (rich in antioxidants)
  • Leafy greens (spinach, kale)
  • Whole grains
  • Legumes (beans, lentils)

Recipe of the Week: "Can't Believe It's Vegetarian" Cauliflower Steaks

This hearty, flavorful dish will satisfy even the most dedicated meat-lovers!

Ingredients (serves 4):

  • 2 large cauliflower heads
  • 4 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Cut cauliflower heads into 1-inch thick "steaks".
  3. Mix olive oil, paprika, garlic powder, cumin, salt, and pepper in a bowl.
  4. Brush mixture onto cauliflower steaks.
  5. Roast for 25-30 minutes, flipping halfway through.
  6. Mix tahini and lemon juice for the sauce.
  7. Drizzle sauce over cauliflower and sprinkle with parsley before serving.
